Mmm, Parsnip Fries

I recently saw an episode of Good Eats with Alton Brown. He was featuring parsnips. More specifically, the way parsnips can fool kids into eating other vegetables.

Today I saw this recipe: http://www.juliemorris.net/2010/08/02/parsnip-fries/

Ooooh - looks so good. Cannot wait to try. :-D

Fine Tuning

I guess the best way to really stick to a plan and meet goals is to know exactly what I am aiming for. I've been doing the weight loss goals in baby steps. It is easier for me to meet 5 lbs at a time instead of the full 40. In fact, I'd actually like to lose around 60 lbs but for now my goal is 40. When I was at my thinnest (in my adult life) I felt I was TOO skinny and I did not like how my eyes looked sunken in. So, I want to get to a good SIZE and then get FIT if that makes any sense. Of course I will be getting fit along the way...

Anyway, one of my goals is to try to eat Gluten Free for about two weeks. Why, you ask? Because I wonder if I will feel better and have more energy if I eat GF.

I also would love to eventually give up dairy. I know I feel better when I don't have any dairy so why eat it at all?

Then, down the road, if DH and I decide to have a baby, I would love to be in the best shape possible. There are so many things that need to go right in order to have a successful pregnancy, I'd like to have the best start possible. Being fit and having a good diet seems like a good start.

That being said, if we do have kids, we'd be raising them vegetarian or vegan. So I want to be sure that I have mastered the art of planning meals to have all the appropriate factors. I think the Eat Clean Diet plan does this.

I'm almost 30 but I feel so tired and sluggish every day. I need to get out of this slump and start feeling energized - every day.

I'm continuing to search for information about easy & healthy vegetarian/vegan meals, gluten free diets, and raising a vegetarian/vegan family.

On that note, I'm off to clean my house and do a Wii workout before I work tonight. :-D

Since December

I realized that I have lost 13 lbs since December. I thought I'd only been gaining weight. I've lost another 3.1 lbs since last week (or the week before). I need to start keeping better track of this stuff.

I spent 45 minutes on the Wii and burned 199 calories.

One thing I really want to work on is my coordination. I have always struggled with coordination and it has been a source of great embarrassment over the years.

I went to a Japanese festival yesterday. They put on a traditional japanese dance and asked people to get up and do the dance in front of the stage. This is WAY out of my comfort zone but I am trying harder and harder to move out of this stupid comfort zone. So, I got up in front of a ton of people and tried to do the dance.

I was hot and sweaty and there was a lady making very large hand and feet movements directly in front of my friend and I. The people behind me were not stepping back as far and I didn't have much room to move around. I was completely mixed up on the movements and I saw people taking videos. It was so embarrassing to be stumbling like a fool, tired and sweaty, being caught on video.

Fast forward to today. I decided to do a routine on my Wii, which I prefer to do alone. I do not like people watching me/talking to me while I try to do the routines. A couple of visitors came by while I was beginning my routine. One of them decided to watch me go through my routine, while chiming in about this or that. Not so much with the helpful while trying to stay balanced.

It seems whenever I try to do the actual routines, we have drop in visitors.

Where is the love?

Anyway - I am sure I will get better with time, on coordination and getting over the whole fear of working out & dancing in front of others. I really hope so!

Yoga, Vegetarian Food, and a Swimming Pool: Could a Weekend Away Get Any Better? | Seventh Generation

Yoga, Vegetarian Food, and a Swimming Pool: Could a Weekend Away Get Any Better? Seventh Generation

What I have been up to...

I realized I have not posted much about my diet or workout routines. I suppose no one expects me to change overnight but I feel so tired and sluggish all the time. Too tired to work out more than I do. Too slow of a start.

It is odd, when I stay up at night, I get a burst of energy around 2 or 3 am. I've had several cleaning parties in the middle of the night. I guess when the mood to clean strikes, you should go with it. I never feel that energized during the day, even though I do thrive on sunlight. Bizarre.

I've been continuing with the pool exercises. We (my mom and I) enjoy pool time much more when there are not many people there. The pool is quiet, peaceful, and cool. It is a nice break in the day. Not as much fun when there are people talking loudly and smokers filling the air with crap. Oh well.

I thought it would be fun to walk at the mall. Unfortunately, several companies think that "scent branding" is the way to go and the whole mall smells like a perfume factory. Not so good for us with chemical/fragrance sensitivity.

What I would like to do is use the Wii Fit for about an hour every day, then do an hour in the pool every evening.

We have not bought soda or juice in a few weeks. We have been perfectly happy with just water. I've been able to resist the urge to buy soda while out to eat. I did have several glasses of sprite and pineapple juice while at a friend's house last weekend. They were small glasses. I still feel good about drinking as much as I have been.

We are always on a budget so we don't eat much. I try to cook as healthy as possible. We've been eating a lot of rice and pasta lately, mixed with sauteed veggies, garlic, and olive oil. We eat whole wheat pasta. I've tried gluten free but was not very happy with the results.

Darbster

A friend told me about Darbster today. Darbster is a vegetarian/vegan restaurant in West Palm Beach. I checked out their website and it looks FABULOUS!

I cannot wait to try it out. They have several vegan and raw options and the food looks great. Even better, the food is affordable.

Yummmmm!!!

My Goal

Well ONE of my goals is to eventually wake up early in the morning and take a long walk. I think that would make an excellent start to the day.

Breakfast too. I want to make sure to eat a good breakfast every morning.

I have a friend, Sabrina, who ALWAYS makes time for breakfast. I mean ALWAYS. I stayed with her once and I was so impressed by the way she found time to eat a small healthy breakfast even though she was in a hurry. She is very fit and active.

I am certain that I will have a lot more energy once I get my diet and exercise on track.
